One medium sliced onion separated into rings.
3 medium tomatoes, cut into wedges.
Half a cup of vinegar.
1/4 cup sugar.
One cup of water.
Two teaspoons salt.
One teaspoon fresh coarse ground black pepper.
1/4 cup oil.
One teaspoon of fresh mint, chopped (optional).
