Step 1: Prepare the Beef
- Start by trimming any excess fat from the beef chuck and cutting it into 1-inch cubes.
- In a bowl, combine the flour, salt, and black pepper. Dredge the beef in the flour mixture, shaking off any excess.
Step 2: Brown the Beef
- In a large Dutch oven or heavy pot, heat 2 tbsp of vegetable oil over medium-high heat.
- Add the beef to the pot in batches, making sure not to overcrowd the pot. Brown the beef on all sides, then remove it from the pot and set it aside.
Step 3: Saute the Vegetables
- Add another tablespoon of vegetable oil to the pot and add the carrots, celery, onion, and garlic. Saute for about 5 minutes or until the vegetables are tender.
Step 4: Add the Beef Back to the Pot
- Add the beef back to the pot and stir to combine with the vegetables.
Step 5: Add the Liquid and Seasonings
- Add the beef broth, red wine, bay leaf, and dried thyme to the pot.
