Bake for 20 minutes.
For the pork chops: Mix flour, garlic, salt, and pepper. Coat each pork chop. In a skillet, heat 2 tbsp butter and 3 tbsp olive oil over medium-high heat. Brown the pork chops (4-5 mins/side).
Place pork chops over the potatoes and bake for 40 minutes until bubbly and golden.
Optional: Garnish with extra chives.
