Instructions:
Cook the Pasta: Follow the package instructions to cook the penne pasta. Once done, drain and set aside.
Prepare the Chicken: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Add the chicken pieces, season with salt, pepper, and Italian seasoning, and cook until browned and fully cooked, approximately 5-7 minutes.
Cook the Sun-Dried Tomatoes: Remove the chicken and in the same skillet, add the sun-dried tomatoes. Cook for 1-2 minutes to soften.
Create the Creamy Sauce: Lower the heat and pour in the heavy cream. Stir to combine with the tomatoes and let it simmer for 2-3 minutes to thicken slightly.
