INSTRUCTIONS:

- Cook the chicken breasts until fully cooked and tender. Shred the chicken using forks or chop it into bite-sized pieces. Set aside.
- Steam or blanch the chopped broccoli florets until they are bright green and tender-crisp. Drain and set aside.
Step 2: Preheat Your Oven
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or casserole dish with cooking spray or butter.
Step 3: Prepare the Casserole Mixture
- In a large mixing bowl, combine the cooked rice, shredded chicken, steamed broccoli florets, chopped onion (if using), minced garlic, condensed cream of chicken soup, mayonnaise (or Greek yogurt), and chicken broth. Mix everything together until well combined.
- Season the mixture with salt and pepper to taste. Adjust seasoning according to your preference.
Step 4: Assembling the Casserole
- Transfer the casserole mixture into the greased baking dish, spreading it out evenly.
- Sprinkle shredded cheddar cheese evenly over the top of the casserole mixture, covering it completely.
