Begin by finely chopping 1/2 cabbage and 1 potato. You can shred or chop them according to your preference.
Heat olive oil in a large skillet or pan over medium heat. Add the chopped cabbage and potato, and sauté them until they become tender and slightly browned. This should take about 10-15 minutes. Season with salt and pepper to taste.
While the cabbage and potato are cooking, beat 3 eggs in a bowl and set them aside.
Dice 1 tomato and mince 3 cloves of garlic.
Once the cabbage and potato are cooked, add the diced tomato and minced garlic to the skillet. Continue to sauté for a few more minutes until the tomato softens and the garlic becomes fragrant.
Pour the beaten eggs evenly over the cabbage and potato mixture in the skillet. Allow the eggs to cook and set on the bottom.
While the eggs are still slightly runny on top, sprinkle 100 grams of cheese over the surface. You can use your choice of cheese, such as cheddar or mozzarella.
Drizzle tomato sauce over the top for extra flavor.
Cover the skillet and let it cook on low heat until the eggs are fully set and the cheese is melted.
Garnish with chopped spring onions for a burst of freshness.
