– 1/4 teaspoon salt
– 1/2 teaspoon ground cinnamon
– 1/4 teaspoon nutmeg (optional)
– 2 large eggs
– 1/4 cup unsalted butter, melted and cooled
– 1 teaspoon vanilla extract
For the cinnamon sugar coating:
– 1/4 cup granular erythritol
– 1 teaspoon ground cinnamon
Directions:
1. In a large mixing bowl, whisk together almond flour, coconut flour, erythritol, baking powder, salt, cinnamon, and nutmeg (if using).
2. In a separate bowl, beat the eggs, then add the melted butter and vanilla extract, mixing until well combined.
3. Pour the wet ingredients into the dry ingredients and stir together until a dough forms.
4. Preheat your air fryer to 350°F (if it requires preheating). Meanwhile, form the dough into small, bite-sized balls, about one inch in diameter.
5. Place the donut holes in the air fryer basket, ensuring they don’t touch so they can cook evenly. You may need to work in batches depending on the size of your air fryer.
6. Cook for 8-10 minutes, or until they’re golden brown and a toothpick inserted into the center comes out clean.
7. While the donut holes are cooking, mix the additional erythritol and cinnamon together in a small dish for the coating.
8. Once cooked, lightly brush the donut holes with a bit of melted butter (optional) and immediately toss them in the cinnamon sugar coating to cover.
9. Serve warm and enjoy your guilt-free indulgence!
