Whether you’re serving it to family or guests, this pie is sure to be a hit. Here’s how to make this delicious dish at home.
Ingredients:
For the Pie Crust:
1 1/4 cups all-purpose flour
1/2 teaspoon salt
1/2 cup cold unsalted butter, cut into small cubes
3-4 tablespoons ice water
For the Filling:
1 lb (450g) ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1/2 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/2 teaspoon chili powder (optional)
Salt and pepper, to taste
1/2 cup grated cheddar cheese (plus more for topping)
1/4 cup chopped green onions (plus more for garnish)
3 large eggs
1/2 cup milk or heavy cream.
Instructions:
Prepare the Pie Crust:
In a large mixing bowl, whisk together the flour and salt.
Add the cold butter cubes and, using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.
Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Be careful not to overwork the dough.
Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Pre-bake the Crust:
Preheat your oven to 375°F (190°C).
On a lightly floured surface, roll out the chilled dough into a circle large enough to fit a 9-inch pie dish.
Carefully transfer the dough to the pie dish, pressing it into the bottom and sides. Trim any excess dough and crimp the edges if desired.
