Ingredients
For the Stuffed Cannelloni:
8-10 cannelloni pasta tubes (or fresh lasagna sheets rolled into tubes)
1 lb (450g) haggis, cooked and crumbled (you can use store-bought haggis or homemade)
1/2 cup ricotta cheese (optional, for added creaminess)
1/2 cup grated Parmesan cheese
1 tablespoon olive oil
1 teaspoon dried thyme
1 teaspoon garlic powder
Salt and pepper to taste
For the Arrabbiata Sauce:
2 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon red pepper flakes (adjust to your heat preference)
1 (28 oz) can crushed tomatoes
1 teaspoon sugar (to balance acidity)
1/2 teaspoon dried oregano
Salt and pepper to taste
