For the Shrimp:
1 pound large shrimp, peeled and deveined
2 tablespoons Cajun seasoning
1 tablespoon olive oil
1 tablespoon butter

1/2 cup chicken broth

1 cup stone-ground grits
4 cups water or chicken broth
