Instructions
1. Prepare the Madeleine Pan:
Preheat your oven to 375°F (190°C).
Grease your madeleine pan with butter and then lightly dust with flour, tapping out the excess flour. This helps the madeleines come out easily after baking.
2. Mix Dry Ingredients:
In a small bowl, whisk together the flour, baking powder, and salt. Set aside.
3. Prepare the Wet Ingredients:
In a large bowl, beat the eggs and granulated sugar together until the mixture is light, fluffy, and pale, about 3-4 minutes.
Add the melted butter, vanilla extract, lemon zest, and honey (if using). Mix until fully combined.
