- Preheat the oven to 375°F (190°C).
- In a greased baking dish, layer the ingredients as follows:
- A layer of roasted eggplant slices.
- A handful of fresh spinach leaves.
- Spoon the lamb mixture evenly over the spinach.
- Drizzle a thin layer of béchamel sauce.
- Repeat the layers, finishing with a top layer of béchamel sauce.
- Top and Bake
- Sprinkle grated parmesan cheese over the top layer.
- Bake the casserole in the oven for 25–30 minutes, or until golden and bubbling on top.
- Serve
- Allow the casserole to cool for 5–10 minutes before slicing. Serve warm with a side salad or crusty bread.
