Instructions:
Prepare the Pork:
Preheat your oven to 180-190°C (350-375°F).
Season the pork with salt, black pepper, and paprika. Ensure the seasoning is well distributed on both sides of the meat.
Place the seasoned pork on a baking sheet or in a baking dish.
Prepare the Vegetables:
Heat a small amount of vegetable oil in a skillet over medium heat.
Add the diced onions and fry for a few minutes until they start to soften.
Add the sliced carrots and continue to fry for a few more minutes.
Add the sliced mushrooms and cook for an additional 3-4 minutes, until the mushrooms are tender.
Season the vegetables with salt and pepper to taste.
Assemble and Bake:
Place the sautéed vegetables evenly over the pork on the baking sheet.
Transfer the baking sheet to the preheated oven and bake for about 40 minutes at 180-190°C (350-375°F).
Prepare the Mashed Potatoes:
While the pork is baking, add the chopped potatoes to a pot and cover with water. Add salt to taste.
Bring the water to a boil and cook the potatoes until they are soft, about 15-20 minutes.
Drain the water from the cooked potatoes.
Mash the potatoes with butter and warm milk until smooth and creamy. Stir in the Suluguni cheese until melted and well incorporated.
Garnish with chopped parsley.
Final Bake:
After 40 minutes, remove the pork from the oven and check for doneness.
If the pork is cooked through, add the mashed potatoes on top or on the side of the pork and bake for an additional 15-20 minutes at 220°C (425°F) until the top is golden and slightly crispy.
