Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a skillet over medium heat, cook the ground beef and onions until the beef is browned and the onions are soft. Drain any excess fat.
Season the beef mixture with garlic powder, salt, and pepper. Stir in the shredded cheddar cheese until melted and combined. Let it cool slightly.
Roll out the pizza dough and cut it into 12 equal squares.
Place a spoonful of the beef mixture onto each square of dough. Fold the corners up and pinch to seal, forming a ball.
Bring a pot of water to a boil and add the baking soda. Carefully drop each dough ball into the boiling water for about 30 seconds, then remove and place on the prepared baking sheet.
Brush each pretzel bomb with the beaten egg and sprinkle with coarse salt.
Bake in the preheated oven for 12-15 minutes, or until golden brown.
Let them cool slightly before serving.
