1. Prepare the Potato Mixture:
In a large mixing bowl, combine the mashed potatoes with garlic powder, onion powder, paprika, salt, pepper, and parsley. Mix well until smooth and evenly seasoned.
2. Assemble the Cheese Balls:
Take a small portion of the potato mixture (about a tablespoon) and flatten it in your hand.
Place a small cube or pinch of shredded mozzarella in the center, then carefully wrap the potato mixture around it, forming a smooth ball. Repeat until all the potato mixture is used.
3. Coat the Cheese Balls:
Roll each potato ball in flour, then dip it into the beaten eggs, and finally coat it evenly with breadcrumbs. For extra crispiness, repeat the egg and breadcrumb steps.
4. Fry the Cheese Balls:
Heat oil in a deep pan or fryer over medium-high heat (about 350°F/175°C).
Fry the balls in small batches until golden brown and crispy, about 2-3 minutes per batch. Remove with a slotted spoon and drain on paper towels.
5. Serve and Enjoy:
Serve hot with your favorite dipping sauces like marinara, garlic aioli, or spicy ketchup!
