Preheat your oven to 375°F. Line a baking sheet with parchment paper.
Slice the sandwich rolls in half lengthwise, but don’t cut all the way through.
Spread a thin layer of mustard or Thousand Island dressing on the inside of each roll, if using.
Layer pastrami, sauerkraut, and a slice of Swiss cheese into each roll.
Brush the tops of the rolls with melted butter and place them on the prepared baking sheet.
Bake in the preheated oven for 8-10 minutes, or until the cheese is melted and the rolls are lightly toasted.
