Instructions
Step 1: Mash the Bananas
In a mixing bowl, mash the ripe bananas using a fork until smooth. If you prefer a chunkier texture, leave some small banana pieces.
Step 2: Mix the Ingredients
To the mashed bananas, add peanut butter, chia seeds, vanilla extract, cinnamon (if using), and a pinch of salt. Stir well until combined.
Step 3: Add the Milk
Gradually pour in the milk while stirring continuously to ensure even mixing. If you like your pudding a little sweeter, add maple syrup or honey at this stage.
Step 4: Let the Chia Seeds Work Their Magic
Transfer the mixture into a jar or an airtight container. Stir one more time to distribute the chia seeds evenly. Cover and refrigerate for at least 4 hours or overnight for best results.
Step 5: Stir and Serve
Before serving, give the pudding a good stir to break up any lumps. Top with sliced bananas, crushed peanuts, and a drizzle of peanut butter for extra flavor and texture. Enjoy chilled!
