Step 1: Prepare the Brioche Dough
- In a small bowl, mix warm milk, yeast, and 1 tablespoon of sugar. Let it sit for 5-10 minutes until foamy.
- In a stand mixer bowl, combine flour, remaining sugar, and salt.
- Add eggs, vanilla extract, and the yeast mixture. Mix on low speed until a sticky dough forms.
- Gradually add butter, one piece at a time, mixing until fully incorporated.
- Knead for about 10 minutes until the dough is smooth and elastic.
- Transfer the dough to a greased bowl, cover, and let rise for 1.5 hours or until doubled in size.
Step 2: Prepare the Vanilla Cream
- In a saucepan, heat milk over medium heat until just simmering.
- In a separate bowl, whisk egg yolks, sugar, and cornstarch until smooth.
- Slowly pour the hot milk into the egg mixture, whisking constantly.
- Return the mixture to the saucepan and cook over low heat, stirring, until thickened.
- Remove from heat, add vanilla extract and butter, and mix until smooth.
- Cover with plastic wrap touching the surface to prevent a skin from forming, then chill.
Step 3: Assemble the Brioche
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Roll out the brioche dough on a floured surface into a large rectangle (~1/2 inch thick).
- Spread the chilled vanilla cream evenly over the dough.
- Sprinkle chocolate chips over the cream.
- Carefully roll the dough into a log and slice into even portions.
- Place on the prepared baking sheet, cover loosely, and let rest for 20 minutes.
Step 4: Bake
- Brush the brioche rolls with an egg wash.
- Bake for 20-25 minutes, or until golden brown.
- Let cool slightly before dusting with powdered sugar (optional).
