In a large skillet, soften the butter over medium heat. Add the minced garlic and cook for approximately one to two minutes, until aromatic. Care must be taken not to roast the garlic.
2nd Step:
If using white wine, add it to the pan and simmer for one minute to evaporate the alcohol.
3rd Step:
Add the shrimp to the skillet and sauté for 2 to 3 minutes per side or until opaque and pink. Overcooking shrimp can cause it to become brittle and gelatinous.
4th Step:
Reduce the heat to low and blend in the lemon juice, Italian seasoning, crushed red pepper, salt, and ground black pepper. Allow the flavors to combine for an additional minute or two.
5th Step:
To evenly distribute the parsley’s flavor, sprinkle it over the shrimp scampi before tossing it.
6th Step:
Serve the shrimp scampi on a bed of prepared linguini, spooning the aromatic sauce over both the shrimp and the pasta.
7th Step:
To finish, add additional minced parsley as a garnish for a fresh and vibrant accent.
RECIPE NOTES:
You can make this dish alcohol-free by omitting the white wine and replacing it with the same amount of chicken or vegetable broth in the recipe that follows.
Before adding the garlic, you may make the sauce a little bit thicker by stirring one spoonful of flour into the melted butter in the pan. First, you need to cook the flour for a minute or two to eliminate the raw flavor, and then you may continue with the process as described.
