1 carrot, grated
2 tablespoons fresh parsley, chopped (extra for garnish)
Salt and pepper, to taste
1 tablespoon soy sauce
1 teaspoon sesame oil
12-16 rice paper wrappers
Warm water for rice paper
1 tablespoon vegetable oil, for frying
