4. Make the Tomato Sauce:
In the same skillet, add another 2 tablespoons olive oil and sauté the onion and garlic over medium heat until softened and fragrant, about 5 minutes.
Add the crushed tomatoes, white wine, oregano, basil, salt, and pepper. Stir to combine and bring to a simmer.
5. Simmer the Meat Rolls:
Return the browned meat rolls to the skillet with the tomato sauce. Spoon some sauce over the rolls, cover the skillet, and let everything simmer over low heat for 45 minutes to 1 hour, turning the meat rolls occasionally so they cook evenly and absorb the flavors of the sauce.
6. Serve:
Once the meat is tender and the flavors have melded together, remove the toothpicks or twine from the meat rolls.
Serve the Sicilian meat rolls hot with the rich tomato sauce spooned over them. They pair wonderfully with mashed potatoes, polenta, or crusty bread to soak up the sauce.
