1. Cook the noodles:
Bring a pot of water to a boil and cook the rice noodles according to the package instructions (usually 3–5 minutes). Drain and rinse with cold water to prevent sticking.
2. Prepare the sauce:
In a small bowl, whisk together lime juice, lime zest, soy sauce, honey, rice vinegar, sesame oil, and salt. Set aside.
3. Saute the aromatics:
In a large pan, heat olive oil over medium heat. Add minced garlic and red pepper flakes, cooking for about 30 seconds until fragrant.
4. Combine everything:
Add the cooked noodles to the pan and toss to coat with the garlic and oil.
Pour in the prepared sauce and mix well, letting it heat for 1–2 minutes to absorb flavors.
5. Finish with fresh herbs:
Remove from heat and stir in chopped cilantro and green onions.
Garnish with toasted peanuts, sesame seeds, or extra lime wedges.
