2 medium-sized eggplants
100 g breadcrumbs (wholemeal if you prefer)
50 g grated parmesan cheese
2 eggs
1 teaspoon sweet paprika (optional)
1 teaspoon dried oregano
Salt and pepper to taste
Extra virgin olive oil to taste (for brushing)
