Ingredients
For the Cookies:
1 1/2 cups all-purpose flour
1 cup ground almonds (almond meal or finely ground almonds)
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter (softened)
1/2 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon almond extract (optional, for extra almond flavor)
For the Filling:
1/2 cup strawberry jam (or raspberry jam, if preferred)
Powdered sugar (for dusting)
