300 g cooked and peeled pink shrimps

100 g fresh cream
1 clove garlic, finely chopped
1 bunch chopped chives
1 lemon (juice and zest)
12 savoury biscuits (cracker type)

Separate the eggs
Separate the egg whites from the yolks and place them in two separate bowls.
Prepare the mascarpone mixture
In a bowl, mix the egg yolks with the mascarpone and the crème fraîche until a smooth and homogeneous consistency is obtained.
Add the aromatics
Add the chopped garlic, chives, lemon juice and zest to the mascarpone mixture.
Season with salt and pepper.

Beat the egg whites until stiff peaks form with an electric mixer or whisk until stiff peaks form.
Add the egg whites
Carefully fold the egg whites into the mascarpone mixture, using a spatula and moving from bottom to top to maintain the airiness.
