for stuffed peppers:
3 bell peppers 1/2 cup
rice
1 cup water
1/2 teaspoon salt (for rice)
1 onion,
finely chopped 2 garlic cloves, minced
300 g (10.6 oz) ground beef
400 g (14 oz) chopped tomatoes
1 teaspoon Italian herbs
1/2 teaspoon salt (for garnish)
Black pepper, to taste
Bunch parsley, chopped
100 g (3.5 oz) cheddar cheese,
grated 60 g (2 oz) mozzarella cheese, grated
For the Golden Zucchini with Hot Chili and Garlic:
Olive oil 1 hot chili pepper,
finely chopped 2 zucchini, sliced
Juice of 1/2 lemon Salt

dried garlic Parmesan cheese, for sprinkling
